A pyrimidine moiety exhibiting a wide range of pharmacological activities has been employed in the design of privileged structures in medicinal chemistry. To prepare libraries of novel heterocyclic compounds with potential biological activities, a series of novel 2-(pyridin-2-yl) pyrimidine derivatives were designed, synthesized and their biological activities were evaluated against immortalized rat hepatic stellate cells (HSC-T6). Fourteen compounds were found to present better anti-fibrotic activities than Pirfenidone and Bipy55 ‘ DC. Among them, compounds ethyl 6-(5-(p-tolylcarbamoyl)pyrimidin-2-yl)nicotinate (12m) and ethyl 6-(5-((3,4-difluorophenyl)carbamoyl)pyrimidin-2-yl)nicotinate (12q) show the best activities with IC50 values of 45.69 mu M and 45.81 mu M, respectively. Furthermore, the study of anti-fibrosis activity was evaluated by Picro-Sirius red staining, hydroxyproline assay and ELISA detection of Collagen type I alpha 1 (COL1A1) protein expression. Our study showed that compounds 12m and 12q effectively inhibited the expression of collagen, and the content of hydroxyproline in cell culture medium in vitro, indicating that compounds 12m and 12q might be developed the novel anti-fibrotic drugs.

Direct alkylation and arylation of allylic C(sp3)-H bonds are straight-forward approaches for accessing allylic C-C products. However, the engagement of allylic C-C bond- forming reaction without introducing extraneous functional groups and stoichiometric oxidant or reductant has proved difficult. Here, we report a general and mild strategy using semiconductor quantum dots (QDs) as photocatalysts for coupling a broad range of available allylic C(sp(3))-H bonds with alpha- amino C-H bonds or heteroarenes, respectively, under sunlight irradiation (> 85 examples). The protocol bypasses stoichiometric oxidant or reductant and pre-functionalization of both the coupling partners and produces hydrogen (H-2) as the byproduct. The outstanding efficiency and selectivity and step- and atom-economy represents the first direct alkylation and arylation of allylic C(sp(3))-H bonds with hydrogen evolution powered by solar energy.

Electrostatic interactions between a quaternary pyridyl-beta-diketonate and anionic charged nanosheets were observed to produce a highly emissive dispersion in a rich water solution. A greater fluorescence quantum yield of approximately 50% was obtained when a luminogenic beta-diketonate, 1-(4-methoxyphenyl)-3-(3-hydroxyethyl-pyridinium bromide)-1,3-propandione (prepared by the Claisen condensation reaction and subsequent quaternization), was molecularly dispersed and enclosed by a couple of atomically flat ultrathin (approximately 1.0 nm) silicate sheets of anionic layered clay. By accommodating beta-diketonate into a narrow interlamellar space (approximately 0.4 nm distance), the molecular motion was suppressed, as confirmed by a smaller non-radiative relaxation rate constant, which was obtained by time-resolved luminescence and quantum yield measurements. Because the dense packing of beta-diketonate quenched the excited state, the isolation of luminogens by the co-adsorption of photochemical inert cations (tetramethylammonium and benzylammonium) was prevented by concentration quenching. A lower quantum yield was obtained by expanding the interlayer distance above 1.0 nm by co-adsorbing a photo-inactive water-soluble polymer, poly(vinylpyrrolidone). Therefore, the fixation and spatial separation of beta-diketonate in the narrow interlayer space was determined to be essential for obtaining strong emission.

Sufu is a pleasant-tasting, traditional Chinese fermented soybean food that is rich in nutrients. In this study, the changes of volatile and nonvolatile metabolites in sufu fermented by bacillus licheniformis, were investigated. The results indicated that a total of 55 kinds of nonvolatile compounds were detected, including 2 carbohydrates, 4 alcohols, 17 amino acids, 18 organic acids, 6 biogenic amines, and 8 other substances. Furthermore, a total of 58 volatile compounds identified were composed of 11 esters, 16 alcohols, 10 acids, and 21 miscellaneous compounds. Inoculation of bacillus licheniformis enriched the metabolite pro?le of sufu and improved its functionality and safety of edibility. It was observed that the pure fermented starter resulted in controlled acceleration of sufu maturation.

BACKGROUND There is a close relationship between certain ‘aging markers’ in wine and the wine’s age. This study aimed to characterize all extracted aging markers in Chinese rice wine and distinguish the ages of Chinese rice wine using principal component analysis (PCA) and cluster analysis (CA). RESULTS A total of 49 potential aging markers (P <= 0.05*) were extracted from 71 volatile organic compounds (VOCs) in Chinese rice wine across a range of seven different ages. Of all 49 extracted aging markers, all furans, 2/3 aldehydes and ketones maintained significantly increasing levels with age (P <= 0.01**), especially sotolon (0.981**) and acetophenone (0.951**). On the other hand, all sulfides decreased significantly (P <= 0.01**). Changes in vanillin, guaiacol, 4-vinylguaiacol (4-VG) and 4-ethylguaiacol (4-EG) also suggested a potential synthesis during the aging process. The results of PCA and CA demonstrated that Chinese rice wines with different ages could be clearly distinguished from each other, which was consistent with the evolution of the 49 aging markers during the aging process. CONCLUSION These 49 potential 'aging markers' successfully distinguished ages using PCA and CA. Our results therefore throw light on the characterization of VOCs during Chinese rice wine aging, and provide a quantitative basis for discriminating the ages of Chinese rice wine. A study was carried out to determine systematically the key aroma-active compounds of Langyatai Baijiu with Jian flavour (LBJF) using sensory omics analysis (SOA). A total of 56 odorants were screened out using gas chromatography-olfactometry-mass spectrometry (GC-O-MS)/Osme analysis. Among them, 15 aroma-active components were first identified. After quantitation, 30 odorants had odour activity values (OAVs) > 1.0 in LBJF. Recombinant and omission experiments proved that the esters, alcohols, acids, especially ethyl hexanoate, gamma psi psi-nonalactone, and dimethyl trisulfide, were critical to the flavour of LBJF. The basic and commercial liquors had obvious differences in the skeleton compositions of esters and acids. This study uncovers the characteristics of Jian flavour Baijiu (JFB) and provides a scientific basis for the quality control of JFB, which is helpful for the development of Chinese Baijiu flavour styles.
